Our Approach to Food Safety
Plan ahead. Store carefully. Use food in time.
Batch cooking and planned leftovers can make everyday cooking easier, but only when food is handled and stored safely.
PREPELIO takes a conservative approach to food storage. When authoritative guidance provides a storage range, we prefer planning food for earlier use within that range rather than treating the maximum as a target.
Recipe-specific guidance takes priority, and when there is uncertainty, the shorter appropriate storage window should be used.
Plan food for when it's at its best — not for the last possible moment it might still be usable.
Keep cold food cold
Keep your refrigerator at 40°F (4°C) or below and your freezer at 0°F (-18°C) or below. Use an appliance thermometer to check the temperature rather than assuming it is cold enough.
Cool and refrigerate promptly
Refrigerate or freeze perishable food and leftovers within 2 hours of cooking or purchasing, or within 1 hour when the surrounding temperature is above 90°F (32°C). Divide large amounts of cooked food into shallow containers so they cool more quickly. Do not leave a large pot at room temperature to cool before refrigerating it.
Use refrigerated leftovers in time
USDA guidance gives many cooked leftovers 3 to 4 days in the refrigerator when they have been handled safely. That range is an upper storage guide, not a reason to delay eating them. Follow any shorter recipe-specific guidance and plan for earlier use when practical.
Freeze early, not at the end of the refrigerator window
Where freezing is appropriate for the food, freeze portions intended for later use promptly. Do not treat freezing as a last-minute extension of refrigerated storage. Freezing does not make food safe if it was already mishandled.
Thaw food in the refrigerator, in cold water or in the microwave — not on the counter. Food thawed in cold water or a microwave should be cooked promptly afterward.
Cook thoroughly
Use a food thermometer and current official guidance for the particular food you are preparing. Appearance alone cannot establish that meat, poultry, seafood or egg dishes have reached a safe internal temperature. Keep raw meat, poultry, seafood and eggs separate from ready-to-eat food, and clean hands, utensils and surfaces during preparation.
Reheat only what you need
When possible, store future portions separately so you can reheat only the food you plan to eat. Reheat leftovers thoroughly to 165°F (74°C), checking with a food thermometer. Bring sauces, soups and gravies to a boil when reheating.
Your kitchen conditions matter
Safe storage depends on what happened before the food reached the refrigerator: how it was cooked, how long it stayed out, how quickly it cooled and whether it remained cold. Keep raw foods separate, use clean equipment and follow package instructions where they apply.
People who may need extra care
Young children, pregnant people, older adults and people with weakened immune systems can face greater risks from foodborne illness. If you are preparing food for someone at higher risk, consult current official guidance appropriate to them.

Storage times and meal-plan dates assume that food has been handled, cooked, cooled and stored safely and continuously at appropriate temperatures.
PREPELIO cannot monitor how food is handled in your kitchen, including how long it has been left at room temperature, the temperature of your refrigerator or freezer, whether it was cooked thoroughly, or how it was stored after preparation.
If food has not been handled or stored safely, do not rely on a PREPELIO meal-plan date or storage instruction to determine whether it is safe to eat.
When in doubt, follow current official food-safety guidance and discard food if its safety is uncertain.
Don't rely on smell or appearance alone.
Food can be unsafe even when it looks or smells normal. If you're unsure how food has been handled or stored, don't use appearance, smell or taste as proof that it is safe to eat.
Food allergies and special dietary needs
PREPELIO is not designed to manage food allergies or medical dietary requirements. Always check ingredient labels and product information yourself, particularly when cooking for someone with a food allergy or intolerance. Ingredients and formulations can vary between brands and products, and cross-contact may occur during preparation.

If you have a medical condition, food allergy or specific dietary requirement, follow the advice of an appropriate healthcare professional and check ingredients and product information carefully.
