
Salmon with Potatoes & Green Beans
Oven-baked salmon with golden potatoes and tender green beans, finished with garlic and fresh lemon. A simple, balanced dinner made with everyday ingredients.

- 1080 gPotato
- 600 gGreen beans
- 45 mlOlive oil
- 1 wholeLemon
- 3 clovesGarlic, minced

Method
Preheat the oven to 200°C. Cut the potatoes into bite-sized pieces and spread them on a large baking tray. Toss with about two-thirds of the olive oil, season with salt and black pepper, and roast for 20 minutes.
Meanwhile, trim the green beans. Bring a pot of water to the boil and cook the beans until tender but still slightly firm, about 6–8 minutes. Drain well.
After the potatoes have roasted for 20 minutes, turn them and make space for the salmon fillets. Add the salmon to the tray and drizzle with the remaining olive oil. Season with salt, black pepper and the minced garlic.
Return the tray to the oven and bake for another 12–15 minutes, or until the salmon is cooked through and flakes easily and the potatoes are golden and tender.
Serve the salmon with the roasted potatoes and green beans. Finish with lemon juice just before serving.
